Healthiest foods for Lupus & Cinco De Mayo?

Updated: Apr 18

Cinco de Mayo is a popular Mexican holiday that is celebrated on May 5th every year. While many people associate this holiday with the American celebration of Cinco de Mayo with margaritas, and fried versions of Mexican dishes, there are plenty of healthy and nutritious foods that you can enjoy on this festive occasion.

From history.com, "Cinco de Mayo, or the fifth of May, is a holiday that celebrates the date of the Mexican army’s May 5, 1862 victory over France at the Battle of Puebla during the Franco-Mexican War. The day, which falls on Friday, May 5 in 2023, is also known as Battle of Puebla Day. While it is a relatively minor holiday in Mexico, in the United States, Cinco de Mayo has evolved into a commemoration of Mexican culture and heritage, particularly in areas with large Mexican-American populations."

In this blog post, we will explore some of the healthiest foods to eat if you are celebrating Cinco de Mayo.

  1. Grilled Fish Tacos

Fish tacos are a classic Mexican dish that can be a healthy option for Cinco de Mayo. Grilled fish, such as tilapia or mahi-mahi, is high in protein and low in calories. Top them with fresh vegetables like lettuce, tomatoes, and avocado.

2. Ceviche

Ceviche is a seafood dish that is popular in many Latin American countries, including Mexico. It typically consists of raw fish or shrimp that is marinated in lime juice and spices. The acid in the lime juice "cooks" the fish, giving it a tender texture and a tangy flavor. Ceviche is high in protein and low in calories, making it a healthy option for Cinco de Mayo.

3. Guacamole

Guacamole is made from avocados, tomatoes, onions, jalapeños (sometimes) and lime juice. This dip is rich in healthy fats, vitamins and minerals, and it can be enjoyed with raw vegetables like carrots and celery for a healthy snack.

4. Black Bean Salad

Black beans are a staple in Mexican cuisine, and they are a great source of protein and fiber. A black bean salad can be a healthy and filling dish for Cinco de Mayo. Simply mix black beans with diced tomatoes, red onion, and cilantro, and dress with lime juice and olive oil.

5. Grilled Vegetables

Grilled vegetables are a healthy and delicious side dish for any Cinco de Mayo celebration. Zucchini, bell peppers, and onions are all great options for grilling. Brush them with olive oil and season with chili powder and cumin for a flavorful and nutritious dish.

In conclusion, Cinco de Mayo doesn't have to be an unhealthy holiday. By choosing nutritious foods like grilled fish tacos, ceviche, salsa and guacamole, black bean salad, and grilled vegetables, you can enjoy a delicious and healthy celebration. Happy Cinco de Mayo!
